      In my opinion and experience chicken skin is actually very fatty. PBC doesn't dry out your cook and it remains moist and doesn't require additional oil. Thanks for asking!

    130 should have been the final temp for medium rare. Searing it probably raised it another 10-15 degrees. How long did you have it on the kettle and at what temp was the kettle? I'm planning on smoking one of these on a Weber Smokey Mountain this weekend around 225-250 until it reaches 115-120, then searing in a cast iron pan on top of a chimney starter until it hits 130.

      Thanks for the comment! Rib eye cap is very marbled and I'm really cook for doneness, color, tenderness as opposed to temp.

      Sorry for the late response, about another hour and fifteen minutes. I do most PBC cooks by sight and temp. The way the PBC convection works sometimes I only turn the meat over to baste. The PBC is an amazing cooker!

    I know if you let salt sit on a steak for a few hours it will tenderize it do you think that's necessary for USDA prime cut

      Episode 29 I dry brined a Prime NY strip and it was just a bit better. BTW I only use Kosher or sea salt, I never use regular table salt for anything.

      It's a more pure water, distilled, and has no taste or unpleasantness tap water may have, I even use it to make ice & coffee.

      I've had a PBC for a little over 3 years. It does most of the ribs, pulled pork, turkey and brisket. I still use the Weber for grilling steaks, burgers and chicken. Flipping food is a little awkward on the PBC because the grill is deep inside the barrel but it can be done. I just find the kettle a little more convenient. They both work great,

    The look so delicious thanks for the video how long did it take for the PBC one to cook and did you wrappet in foil after it cook for some time?

      Both cooked about same time, PBC cook didn't stall for 7 hours and I didn't have to add any fuel (charcoal). They both cooked over night, I took both to my office to share. Big pit with my employee friends and one for CMill & family. Both wrapped in pink butcher paper then foil. Both came out really well. Serving / resting time was a variable but became irrelevant.
